The BEST Sugar Cookies



These cookies are so moist and yummy! You may think it's weird the recipe calls for sour cream, but it makes them that much more moist! I love this recipe!

3 1/4 cups flour
1 tsp soda
1/2 tsp salt
1 cup sugar
1 egg
1 tsp vanilla
1 cube butter
1/2 cup sour cream

Mix flour, soda, and salt, set aside. Combine other ingredients for 2 minutes. Add the flour mixture and mix well. Make sure to flour well when rolling out dough. Cook at 400 degrees for 4-7 minutes. It's hard to know how long to cook these, it just depends on the oven but keep an eye on them, you don't want them turning golden, they need to stay that white color. Just take them out when they look not quite done, they will probably be done.

Frosting-

2 cups powdered sugar
1 stick butter
1/2 tsp vanilla
1/2 package cream cheese
1/2 tsp almond flavoring (optional, but yummy)
1 tsp popcorn salt (to help get rid of the grainy texture)

Mix together. Add color dye for fun frosting. Enjoy!

Belgium Waffles

4 cups Bisquick
2 TBSP sugar
1/2 tsp baking powder
1/2 cup sour cream
2 tsp lemon juice
1/2 cup buttermilk
1 tsp vanilla
3 eggs
(You can add milk to make the batter thinner if it's too thick.)

Separate 3 eggs, yolks will be added to batter. Beat egg whites until stiff. Mix all other ingredients in a separate bowl, adding the egg yolks. Add egg whites and fold in. Fruit and cool whip are super yummy on these but you can always just do syrup or cinnamon-sugar. Enjoy!

Spinach Dip


2 cups mozz. cheese
1/2 cup sour cream
1/4 cup grated parmesan cheese
1/4 tsp. black pepper
3 cloves of garlic, crushed
1- 14 oz. can artichoke hearts, drained
2- 8 oz. pkgs. cream cheese chopped
5 oz. frozen chopped spinach
Tortillas, french bread, or crackers

Pre-heat oven to 350 degrees. Combine 1 1/2 cups mozz. cheese, sour cream, 2 TBS parmesan and rest of the ingredients. Blend well. Spoon mix into baking dish. Sprinkle with 1/2 cup mozz. cheese and 2 TBS parmesan. Bake at 350 for 30 minutes.

Beef or Chicken Fajitas



3 Chicken breast cut into strips & cooked, or 1/2 lb of round steak or any other steak you prefer, in strips & cooked
1 package of fajita seasoning
1 each- red, orange, and yellow pepper (green is strong but can be used as well)
2 pkgs. of cut fresh mushrooms
1 large onion
1/2 stick of butter

Cook meat and take out of pan. Melt butter and add onion and peppers. (cut into strips) Cook veggies until tender (about 10 minutes.) Add the mushrooms and cook for about 5 minutes or until done. Add fajita seasoning with 1/4 cup water. Return the meat and heat through. Put on tortillas adding cheese, sour cream, salsa, or whatever you like!

What a quick and easy meal! Yum! Enjoy!

Chocolate Crumb Bars


2 sticks of butter-softened
2 cups flour
1/2 cup sugar
1/4 tsp. salt
1-12 oz. pack of semi-sweet chocolate chips (divided)
1 can sweetened condensed milk
1 tsp. vanilla
1 cup chopped nuts
Beat butter until creamy. Beat in flour, sugar, and salt until crumbly. With floured fingers press 2 cups of the floured mixture onto the bottom of a 9 x 13 greased (glass) baking dish. Reserve remaing mixture. Bake at 350 degrees for 10-12 minutes. Warm 1 1/2 cups of chocolate chips and sweetened condensed milk in small heavy saucepan over low heat; stirring until smooth. Stir in vanilla. Spread over hot crust. Stir chopped nuts, remaining chocolate chips and crumb mixture together. Sprinkle over chocolate filling. Bake at 350 degrees for 25-30 minutes, until center is set. Cool in pan, on a wire rack.
Serves 2 1/2 dozen (I cut them into small bite size portions)

Creamy Chicken Noodle Soup


For any of you who are wanting to warm up from the cold winter days, you will LOVE this recipe. It's not like most chicken noodle soups, its thick and creamy! One of my favorites and so easy! Enjoy!

3 qts water
6 cubes Knorr's chicken bouillon
1 pckg. (16 oz.) Country Pasta Egg Noodles
(Homemade style, clear bag with red writing)
3 cans of cream of chicken soup
5 chicken breasts, cooked and cubed
1 1/2 cups sour cream

In large pan bring water and bouillon to a boil. Add noodles. Cook uncovered, until noodles are tender, about 20 minutes. Do not drain. Add soup and chicken, heat through. Remove from heat; stir is sour cream.

This makes A LOT! We freeze leftovers for 2 more meals! It makes about 4 meals for 2, we even take some for leftovers the next day and still have 2 meals to freeze. And it freezes great! All you have to do is heat it up and add a little milk.

*Tip- it takes a little longer than just boiling the chicken in water to cook it, but I bake the chicken with some butter on top with garlic or lemon pepper and it always tastes better baked! But either works! Enjoy! Let me know what you think!

Beef Stroganoff Over Rice


1 lb. hamburger
1 small onion
2 cubes of beef bullion
salt & pepper to taste
1 can cream of mushroom soup
1/2 carton sour cream
1/2 can of water

Brown hamburger and add onion until onion is tender and meat is done. Add the bullion, salt and pepper. Next add the soup, sour cream, and water. Heat through. Pour over rice. (Tip- if you like green beans, they go GREAT with this meal! It's so easy and way yummy, it's one of our favorites!)

Caramel Apple Dip


1 pkg. cream cheese (softened)
1/4 cup powdered sugar
3/4 cup brown sugar
1 tsp. vanilla

Blend together until smooth. And enjoy dipping your apples in!

Mom's Goulash



2 cans diced tomatoes-chipotle style (Western Family)
1 can regular diced tomatoes
1 large can of vegetable juice (like V8)
1 can of corn
1 can of green beans
1 onion
1 lb. of hamburger
2 cups of water
1 pkg. elbow macaroni noodles
shredded cheese

Brown hamburger-add diced onion while browning.
Add everything but the macaroni and cheese and cook for 20 minutes.
Then add macaroni and cook for another 10-15 minutes or until noodles are done. Add plenty of salt and pepper to help flavor it.
Serve with shredded cheese over it.

*Make sure you drain the veggies.
*If you want lots, enough for about 2-3 meals for 2 people, use 2 cans of veggies. (I froze half of it to save it for another dinner.)
*For more flavor and kick, add chili powder.

Homemade Oreos

Ingredients for Cookies-
2 Boxes of Devil’s Food cake mix
¾ Cup Shortening
4 Eggs

Ingredients for frosting-
ShorteningPowdered Sugar
1 TBS Vanilla
¼ Cup Milk

First, mix all the ingredients for the cookies together, either with a hand mixer or an electric mixer. The dough should be pretty thick. Next make small balls with the dough and put on a cookie sheet. (No need to grease.) The dough balls don’t need to be as big as you would do if you were making regular cookies because you will be using 2 cookies to make one oreo cookie. Bake at 375 degrees for 8-10 minutes. The trick to keep them soft is to take them out when they look not quite done, makes for a soft, yummy cookie!For the frosting, I kind of just mix the ingredients until its sweet enough and thick enough. I would start with a cup and a half of shortening and add more if it doesn’t look like enough. Just add powdered sugar until you think it’s thick and sweet enough.Let the cookies cool before frosting them. Enjoy!*Its also fun to add color dye to the frosting for special occasions!

Hawaiian Haystacks



2 cups long grain rice (4 cups minute rice)
2 cans cream of chicken soup
1 can of water
3 chicken breasts
1 green pepper
1/2 onion1 tomatoe
1 small can of sliced olives
1 small can of pineapple
shredded cheese
Chow Mein Noodles

I just cook the chicken breast then cube them. Meanwhile cook rice. Dice up veggies and shred the cheese. I just bought sliced olives and pineapple in a can. When everything is ready pour chicken sauce over rice, next put on the cheese, then add the toppings you like! Enjoy its super yummy! And super easy! (This recipe fed two of us plus leftovers for both of us the next day. FYI.)

Cheesy Chicken, Rice & Broccoli


4 Chicken breasts cooked and let cool then cubed
2 cans cream of chicken soup
3-4 cubes of chicken bouillonsalt & pepper to taste
1 big jar (or 2- 8 oz. jars) of cheese whiz
frozen or fresh cooked broccoli (optional, but so yummy!)
3 cups cooked rice

I cook the chicken (frozen) on 400 degrees for an hour, I put some butter and garlic pepper to help season and flavor the chicken. When the chicken is about done, stir together in a large pan, the cream of chicken soup, bouillon, salt and pepper, and cheese whiz. Heat through. Add the cubed chicken and broccoli. The frozen broccoli you don't need to cook first, but the fresh you do. Heat that through. Add the cooked rice and heat through. Enjoy!I tried this the first time with like Ragu cheese or something, because the store I went to didn't have Cheese Whiz...it wasn't good at all! Make sure you get Cheese Whiz! Just a little tip! This meal is so easy, and SO YUMMY! Also note that this recipe makes enough for about 4 people, but we make it so we have leftovers for lunch the next day! Enjoy, we sure did!!!

Muddy Buddies



9 cups rice Chex cereal
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar
1. In large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter, and butter uncovered on high 1 minute. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.


I halfed this recipe for Dev and I, and it made just enough for both of us! Anyway, enjoy this snack, its super yummy!

Pasta Salad


1 medium head of broccoli
1 medium head of cauliflower
2 tomatoes
Olives (optional, I never put these in) :-)
Pepperoni
1 bottle Italian salad dressing
Cheddar Cheese
Rotini pasta (I use the colorful one, I think its garden rotini)
Cook pasta until tender. While pasta is cooking, cut up veggies into bite size pieces. I also cut the pepperoni slices in half (so they are half circles.) Next cut up the cheese into little cubes, also bite size. When the pasta is cooled and drained, put into a medium to large bowl, add the veggies, separated pepperoni, and cheese. Mix well. Last, pour the bottle of Italian dressing over the top, make sure to mix it in well. Enjoy!

Chicken Broccoli Casserole



2 1/2 cups of white rice
3/4 cup mayo
3-4 chicken breasts
3-4 small heads of broccoli (or a bag of frozen broccoli)
2 cans cream of chicken soup
grated cheddar cheese (enough to cover the top of the casserole)
First I bake the chicken at 400 degrees for one hour. To season the chicken I usually put a little bit of butter on the top of each breast, and then sprinkle salt, pepper, and garlic pepper on top of it. About 15 minutes before the chicken is done, I usually cook the rice and cut up the broccoli and cook it too. Also mix together the cream of chicken soup and the mayo in a small bowl. After the chicken is done cut it up into small, bite size peices. Next you spread the rice over the bottom of a 9 by 13 casserole dish. After that you spread the broccoli evenly over the rice. Next comes the chicken. Last is the sauce mixture. Evenly spread that over the entire casserole. Cover it with tin foil and bake at 350 degrees for 30 minutes. When the casserole has been in for 20 minutes, remove the tin foil and spread the grated cheese over the top. Let cook for another 10 minutes. (leave the tin foil off for the last 10 minutes) Enjoy!
