Garlic Rosemary Red Potatoes


4-5 red potatoes (washed)
Extra virgin olive oil (EVOO)
Salt & Pepper
Rosemary
Garlic (chopped finely)
1 yellow onion (chopped finely)
Garlic seasoning (optional)
Fresh parmesan cheese (optional)
Cut up potatoes into bit size pieces. Place potatoes in an oven safe casserole dish. Drizzle EVOO over top of the potatoes and mix around until it is even on potatoes. Salt and pepper. Add rosemary (as much or as little as you prefer.) Add garlic, onion, and garlic seasoning and again mix until spread evenly. Bake covered at 375 degrees for 40 minutes or until potatoes are done. Optional- sprinkle fresh parmesan cheese over top of the potatoes and cook for another 10 minutes.
These are super yummy potatoes that you can add to any meal as a side. Tip- make sure you salt them enough, they aren't as good when they aren't salted. Enjoy!
