Quick Beef & Broccoli

So I already have a beef and broccoli recipe on here, but I found this one and we definitely liked it way better, AND it was much easier! There were a few ingredients I didn't have that aren't just in my pantry, but now that I have them I can make this anytime! It's really really good, enjoy!

(Recipe from melskitchencafe)

Sauce:
1 TBSP rice wine vinegar
2 TBSP low-sodium chicken broth
5 TBSP oyster sauce
2 TBSP light brown sugar
1 tsp toasted sesame oil
2 tsp cornstarch

Beef & Broccoli:
3 TBSP soy sauce
1 1/2 lbs flank steak, cut into 2-inch wide strips with the grain, then sliced across the grain into 1/8 inch thick slices
6 medium cloves garlic, minced
1-inch piece fresh ginger, minced
1 tsp peanut oil or vegetable oil, plus extra for cooking
1 1/4 lb broccoli, cut in to bite size pieces
1/3 cup water
3 medium scallions, sliced 1/2 inch thick on diagonal, optional

Directions:
1. In medium bowl, combine beef and soy sauce. Cover and refrigerate at least 10 minutes or up to an hour. Meanwhile, whisk the sauce ingredients together in a liquid measure or small bowl. In another small bowl, combine the garlic, ginger, and 1 tsp oil. Set aside. 
2. Heat 1-2 tsp oil in 12-inch nonstick skillet over medium-high heat until hot and rippling. Add half of the beef to skillet and break up clumps; cook, without stirring, for 1 minute, then stir and cook until beef is browned around edges and cooked through, about 1-2 minutes. Don't overcook the meat - cook until just barely cooked through so the meat stays tender. Transfer beef to a medium bowl and cover with foil. Heat another 1-2 tsp oil in the skillet and repeat with remaining beef.
3. Add 1 TBSP oil to now-empty skillet; heat until rippling and hot. Add broccoli and cook 30 seconds; add water, cover pan, and lower heat to medium. Steam broccoli until tender-crisp, about 2 minutes. Push the broccoli to the sides of the skillet and add the garlic/ginger mixture. Cook, mashing the mixture with a spoon until fragrant, about 15-30 seconds. Stir the mixture in to the broccoli. Add the beef back to the skillet and toss to combine. Whisk the sauce to recombine and add to the skillet. Cook, stirring constantly, until sauce is thickened and evenly distributed, about 1-2 minutes. Transfer to a serving platter, sprinkle with scallions, and serve or serve it straight out of the skillet.
Yields 4-5 servings. I halved it and it fed 3 of us.

Beef and Broccoli


1 pound boneless beef chuck roast, sliced into thin strips
1 cup beef consumme
1/2 cup soy sauce
1/3 cup brown sugar
1 tablespoon sesame oil
3 garlic cloves, minced
2 tablespoons cornstarch
2 tablespoons cooled sauce from the crock pot after being cooked
Fresh broccoli florets (as many as desired)
Hot cooked rice

Place beef in a crock pot. In a small bowl, combine consomme, soy sauce, brown sugar, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stove.) Add broccoli to the crock pot. Stir to combine. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
Serve over hot cooked rice. Or pair with homemade chow mein and won tons.

Shepherd's Pie


1 lb. hamburger
1 packet brown gravy mix
1 cup shredded carrots
1 cup frozen peas
1/2 to 3/4 cup Italian breadcrumbs
1/3 cup water
1-2 TBSP minced onion
3-4 medium sized potatoes
shredded cheese

Boil your peeled and cut up potatoes until they are cooked. Mash them until smooth. Add salt and butter to give them some flavor. Next brown your hamburger, add the gravy mix, carrots, peas, breadcrumbs, water and minced onion. The hamburger mixture should thicken a little and not be runny. When meat is done place it in a 8x8 or 9x13 greased baking dish. Top with the mashed potatoes. Sprinkle cheese over top and bake covered at 350 degrees for 30 minutes. I remove the foil the last 10 minutes to let cheese melt better.

Sweet n' Sour Meatballs


1 lb. hamburger
2 TBSP minced onions
dash of pepper
1 tsp salt
1 egg, beaten
1/4 Italian bread crumbs

Sauce-
3/4 C. packed brown sugar
3 TBSP flour
1 1/2 C. water or pineapple juice
1/4 C. white vinegar
3 TBSP soy sauce

Combine all meatball ingredients in a bowl. Shape into 1-inch balls and place on a baking sheet lined with foil and sprayed with nonstick cooking spray. (Tip, to get meatballs the same size use a cookie scoop). Broil in oven for 5-7 minutes or until the meatballs begin to brown.

In a large saucepan, whisk together the sauce ingredients and bring to a boil. Add the meatballs and reduce heat, cover, and simmer for 20 minutes, stirring often. Serve over rice.

Homemade Chili


1 lb. hamburger
1 large green pepper
1 large onion

1 large can or bottle of V8 juice or vegetable juice
1 can diced tomatoes, chili ready
1 can kidney beans, drained
1 can pinto beans, drained
2 cans chili beans, in chili sauce, do not drain
3-4 TBSP chili powder
salt and pepper to taste

Brown the meat with diced up pepper and onion until the pepper and onion are cooked. Next add the remaining ingredients and bring to a boil. Once boiling, reduce heat and simmer for an hour. Make sure to let this cook for at least an hour for all the ingredients to blend together. You can also let this cook in a crock pot on low for several hours after you do the first step of browning the meat, pepper, and onion. Top with shredded cheese and fritos chips if desired. I also like to serve this with cornbread.

Beef Enchiladas


1 lb hamburger
1 packet taco seasoning
1 small can green chiles
1 can chopped olives
2 cans cream of mushroom soup
1 cup sour cream
bean dip or refried beans
1 small can of red enchilada sauce
8-10 tortillas
shredded cheese

Brown your hamburger and mix in the taco seasoning and water if the packet calls for it. Let that simmer for a few minutes. Mix in the green chiles, olives, 1 can of mushroom soup, and sour cream. Mix together and remove from heat. Next mix your enchilada sauce and the other cream of mushroom soup together until smooth. Place a small amount of beans on the tortilla and spread out in the middle. Next add some of the meat mixture. Add a small amount of cheese and roll up enchilada style. Place these in a 9x13 baking dish. When all tortillas are filled pour the enchilada sauce mixture over the top and sprinkle with shredded cheese. Bake on 350 degrees for 20-30 minutes. You can serve this with beans and mexican rice. Enjoy!

Slow Cooker French Dip Sandwiches



2-3 lb. beef roast
2 - 14 oz. cans beef broth
2 packets onion soup mix
2 cups water
hoagie buns
swiss cheese

I found a cheap rump roast that worked and tasted great! Brown roast on each side. This should only take a few minutes on each side. Salt and pepper it as you brown it. Next place the roast in the crock pot, add 2 cups water, 2 cans broth, and packets of onion soup mix. Cook on high for 4-6 hours or on low 8-10 hours. Before you shred the beef, take out the roast and empty the juice from the crock pot. You can use this as the au jus. Shred the beef. We like to heat the buns up by buttering them, then browning them on an electric griddle. We add swiss cheese to the sandwiches and slice up some potatoes to make homemade fries which go great with these sandwiches. Enjoy!

Taco Meat


1 lb. hamburger
Half a jar of Pace Picante Medium Salsa (or to taste)
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
1/2 to 1 tsp cumin (to taste)
salt and pepper

Brown meat, add the rest of the ingredients and let simmer for 10-15 minutes.
We don't like the packet taco seasoning so my mom came up with adding the salsa and we added a few more spices and came up with this! It's super easy and super yummy! The flavors are much better than the packet taco seasoning! Enjoy!

Stew Meat over Potatoes


I don't have a picture of this meal, I forgot to take one at dinner so I will update this next time I make it. This dinner is super easy and really yummy!

1 package stew meat
1 packet brown gravy mix
1 packet onion gravy mix
water (as per gravy mixes)
Potatoes

I cook the stew meat in the crock pot all day on low, I add a tiny bit of water so the meat doesn't dry out and I sprinkle it with salt and pepper. About an hour before you want to eat, add the 2 gravy packets and the amount of water they call for. Make sure you don't add too much water or it won't thicken. Mix well in the crockpot and let simmer for an hour to thicken up. In the meantime boil your potatoes to make the mashed potatoes. When meat mixture is finished and thickened, pour over mashed potatoes. I usually serve this with corn. Enjoy!

Swedish Meatballs over Noodles

1 packet McCormick Swedish Meatball seasoning
1 lb. ground beef
Egg noodles
Follow the directions on the back of the seasoning packet. There will be 2 different seasonings in this packet, one to mix into the ground beef to make the meatballs and the other to make the sauce to go over top. We usually have this with green beans. It's super yummy and super easy!

Oven Baked Stew

In a plastic bag combine:
1 pkg. dry onion soup mix
1/2 tsp salt
1/2 tsp paprika
1 to 1/2 lbs stew meat in bite size pieces

Placed seasoned meat in an oven safe baking dish. On top of the meat add 3 medium potatoes cut into bite size pieces, 1 onion cut up, and 4 large cooking carrots cut into bite size pieces.
Combine and pour over meat and veggies (sounds weird but it's good):
1 can cream of celery soup
1/2 cup ketchup

Cover and bake for 2 hours on 325 degrees. Optional: garnish with parsley.

Cheeseburger Pie

1 lb. ground beef
1 onion
1 tsp. salt
1/2 cup Bisquick
1 cup milk
2 eggs
Shredded cheddar cheese
Heat oven to 350 degrees. Brown hamburger and onion until cooked. Drain. Add salt. Grease 9-inch ovensafe pie pan. Evenly spread the hamburger mixture in the bottom of the pie pan. Sprinkle the cheese over top of the hamburger mixture. Next mix together Bisquick, milk, and eggs. Pour over the top of the cheese and hamburger. Bake uncovered for 25 minutes or until the top starts to brown.
*At first I was a little iffy about trying this recipe, most recipes that have cheeseburger in the title don't sound good to me because it's not a cheeseburger, example, Cheeseburger hamburger helper, gross. But this recipe didn't sound too terrible and it looked easy so I tried it. It actually turned out quite yummy for a quick, simple meal! Enjoy!

Beef Stew


1 pkg. beef stew meat
2 packets stew seasoning
4 cups water
2-3 large potatoes
1 large onion
3-4 stalks celery
3-4 carrots
1 can corn
1 can green beans
1/2 bag frozen peas

Brown thawed meat and season with salt and pepper. Put 4 cups water and stew seasoning packets in crock pot, stir until mixed. Add browned meat. Cook on high for 2 hours. After 2 hours add the cubed potatoes, diced onion, diced celery, and carrots. Cook for 3 more hours. After 3 hours add the corn, green beans, and peas and cook for 1 more hour. Enjoy!

Sloppy Joes


(This recipe is from Worldwide Ward Cookbook by: Deanna Buxton, recipe from Susan Erickson, page 65.)

2 lb. ground beef
1 onion, chopped
salt and pepper, to taste
1/4 C. ketchup
1 tsp. mustard
4 TBSP. brown sugar
1 TBSP. barbecue sauce
1 TBSP. cider vinegar
2 10.75-oz. cans tomato soup

Brown ground beef and onions. Drain and rinse. Season with salt and pepper. Add remaining ingredients and simmer for 15-20 minutes. Serve on hamburger buns.

Meatball and Veggie Stew

3-4 Stalks of Celery
4 potatoes
1 onion
5 carrots (the cooking ones that are bigger)
water
Meatballs:
1 lb hamburger
1/2 cup onion
1/2 cup bread crumbs
1 tsp. garlic salt
1 tsp. beef bouillon
Make meatballs after mixing all ingredients together. Cook meatballs in a deep skillet until done. Next add all the diced up vegetables to the skillet with the meat. Pour in water until the veggies are barely covered. Cook for 45 minutes or until veggies are cooked all the way through. Make sure to salt and pepper.
This is an easy recipe and makes for a great healthy meal! Enjoy!

Empinadas


1 lb. ground beef
1 Jar Tostitos Salsa Con Queso
1 pckg. taco seasoning
1 pckg. buscuits
1 can diced tomatoes
First, brown ground beef and season it with taco seasoning. Heat through. While meat is heating through roll out buscuit dough to make it a little bit bigger. When meat is heated through add a little to one side of each buscuit.(Remember to leave some extra meat for the sauce that will go over top.) Next fold the buscuit in half (so it ends up in a half circle) and take a fork and seal the ends together. Grease a cookie sheet and place empanadas on sheet. Cook at 400 degrees for about 7 minutes or until buscuits are done or are baked until light brown. While these are baking add the queso and diced tomatoes to the leftover taco meat. Heat through. Pour sauce over empanadas and enjoy! (Thanks Jen for the YUMMY recipe! We LOVE it!!)

French Dip


Roast beef deli style meat
Hoagie buns
Au Jus mix packets
Onions (optional)
Peppers (optional)
Swiss or provolone cheese (optional)
This meal is so quick and easy! First make the au jus sauce following the directions on the packet. (You will probably need a couple packets.) When that has come to a boil, reduce the heat and put the roast beef into the sauce while still on the stove. (This heats the meat through w/out drying it out in the microwave.) While the meat is heating, butter the hoagie buns and toast them. (We do this on our flat grill.) Now you just add meat to the buns and dip them in the au jus! We usually make fries with these, it goes along great with the sandwhiches! Also you can add sauted onions, mushrooms, peppers, and even cheese if you like! Makes for a tasty meal! Enjoy!

Ranch Burgers



So for any of you who love quick and easy dinner ideas here's a great one! Just add a packet of Hidden Valley Ranch salad dressing and seasoning mix to thawed hamburger. This makes for a super-easy and yummy burger! We also buy frozen fast food fries, Ore-ida is the brand and use our fry-daddy to cook them. Anyway, if you haven't tried ranch burgers try em' out!

Beef or Chicken Fajitas



3 Chicken breast cut into strips & cooked, or 1/2 lb of round steak or any other steak you prefer, in strips & cooked
1 package of fajita seasoning
1 each- red, orange, and yellow pepper (green is strong but can be used as well)
2 pkgs. of cut fresh mushrooms
1 large onion
1/2 stick of butter

Cook meat and take out of pan. Melt butter and add onion and peppers. (cut into strips) Cook veggies until tender (about 10 minutes.) Add the mushrooms and cook for about 5 minutes or until done. Add fajita seasoning with 1/4 cup water. Return the meat and heat through. Put on tortillas adding cheese, sour cream, salsa, or whatever you like!

What a quick and easy meal! Yum! Enjoy!

Beef Stroganoff Over Rice


1 lb. hamburger
1 small onion
2 cubes of beef bullion
salt & pepper to taste
1 can cream of mushroom soup
1/2 carton sour cream
1/2 can of water

Brown hamburger and add onion until onion is tender and meat is done. Add the bullion, salt and pepper. Next add the soup, sour cream, and water. Heat through. Pour over rice. (Tip- if you like green beans, they go GREAT with this meal! It's so easy and way yummy, it's one of our favorites!)
